2014 Sunset Shiraz (12 x 750ml), Backwood Valley by Dickinson Estate, 14.5% Alc/Vol. James Halliday Wine Companion 5 STAR 2020 , Winemaking: A cultured yeast used for fermentation, pressed via tank then to oak barrel (12% new French Oak) for 14 months. Tasting Notes: An elegant aroma of bramble fruits and savoury spice. The palate displays concentrated fruit - plums and dark berries. A full-bodied style with fine ripe tannins that are very well integrated with the new and seasoned French oak. Best drunk with beef or lamb. Drink now but will continue to age for 5-8 years under correct cellaring conditions. 2016 Four Jacks Chardonnay (12 x 750ml), Manjimup by Peos Estate, 13.5% Alc/Vol, BLEND 100% Chardonnay. COLOUR Pale straw with green tints. AROMATICS Lifted nose of white stone fruit, citrus blossom, raw cashew with subtle toasty notes. PALATE Full and fleshy mouthfeel, showing intense white nectarine and citrus leaf on the palate with underlying raw cashew and subtle toasty oak, supported by a well integrated acid backbone, great length with a crisp, lingering finish. OAK MATURATION 9 months maturation in French oak. AGEING POTENTIAL 4-5 years. WINEMAKING The chardonnay grapes were picked at optimum ripeness during the coolest period of the night to help retain the vibrant primary fruit flavours. It was transported directly to the winery post-harvest, crushed and pressed to tank and allowed to cold settle. The juice was racked to barrel for fermentation. The ferment temperature was controlled, helping to retain the fresh primary fruit aromas while also developing a complex fermentation bouquet and increased palate weight and texture. Post ferment the wine was fined with traditional additives, cold stabilised and bottled.

2016 Sunset Chardonnay (12 x 750ml), Blackwood Valley by Dickinson Estate, 13.5% Alc/Vol. James Halliday Wine Companion 2020, 5 STAR, Winemaking: A cultured yeast used for fermentation, pressed via tank then to oak barrel (27% new French Oak) for 6 months. Tasting Notes: Lifted aromas of nectarines and white peach with an underlay of toasty spice. A minimal amount of barrel ferment adds complexity to the mid-palate. Flavours of citrus and stonefruit with underlying cashew nut abound on the palate with a lingering finish. Best with chicken, pork and soft cheeses. Drink now and over next 2-3 years.

2014 Chapman Grove Reserve Cabernet Sauvignon (12 x 750ml), Margaret River by Chapman Grove, 14% Alc/Vol, Tasting Notes: Tasting notes 2014 2014 Vintage gave us a very wet winter but an almost perfect vintage. The dense blossom canopy provided a distraction for the birds and the consistent warm dry days enabled us to manage fruit quality and ripening. Chapman Grove Reserve Cabernet Sauvignon 2014: 91 Points James Halliday Machine harvested at night, crushed and de-stemmed, pressed to French oak (25% new, the balance with staves) for 14 months. Beautiful deep rich red colour which is an indication of the depth of fruit flavour in this wine. Typical regional characters of cedar, bramble and char on the nose with a long finish on the palate, wrapped up with fine grained tannins. Mystery 2016 White Label Riesling (12 x 750ml), Frankland River Alc/Vol 12%, Tasting Notes: A classic cold climate growing season with ample rainfall and cold temperatures was followed by a dry and sunny Autumn. The result being a slow, even ripening with tremendous flavour development at a low sugar levels. Brilliant pale straw with green flecks in colour. The palate has intense flavours of lemon, grapefruit with a sherbety acidity giving freshness and length to the palate.

2017 Killerby Semillon (6 x 750ml), Margaret River by Killerby Estate, 14 % Alc/Vol, Tasting Notes:Vineyard Notes: Semillon grapes were sourced from a vineyard north of the Killerby Cellar Store on Caves Road, Wilyabrup. This vineyard is low yielding and is exposed to the prevailing sea breezes keeping the vigour low to moderate. Harvesting Notes: The grapes are harvested in the early morning to retain the fresh, crisp fruit flavours and natural acidity. Winemaking Notes: Grapes were crushed ever so gently to the press. Juice was drained and settled prior to fermentation in a mix of mature French oak. WINE CHARACTERISTICS Colour: Pale green. Nose: Characteristically uplifting aromas of nettles, lemongrass and citrus with mild grassy tones. Palate: Fresh citrus flavours of lemon with spice and weighty texture balanced by mineral acid backbone and a long refreshing chalky palate.
