2014 Chapman Grove Reserve Cabernet Sauvignon (12 x 750ml), Margaret River by Chapman Grove, 14% Alc/Vol, Tasting Notes: Tasting notes 2014 2014 Vintage gave us a very wet winter but an almost perfect vintage. The dense blossom canopy provided a distraction for the birds and the consistent warm dry days enabled us to manage fruit quality and ripening. Chapman Grove Reserve Cabernet Sauvignon 2014: 91 Points James Halliday Machine harvested at night, crushed and de-stemmed, pressed to French oak (25% new, the balance with staves) for 14 months. Beautiful deep rich red colour which is an indication of the depth of fruit flavour in this wine. Typical regional characters of cedar, bramble and char on the nose with a long finish on the palate, wrapped up with fine grained tannins. 2018 Ferngrove White Lable Pinot Noir Rose, VINTAGE The wetter conditions generated in the previous season delivered excellent water storage volumes across the vineyard. The soil profile also had good levels of moisture, culminating in excellent conditions for the vines during bud-burst. The ripening period was steady with temperatures slightly below average for January and February, and then slightly above average for March and April. The near perfect weather produced reds with intense colour and flavour. 2018 was a great vintage. APPEARANCE Pale pink. NOSE Rose petals, spring blossom. PALATE Soft, elegant, textured palate with fresh raspberry and cherry characters and dry finish. VINIFICATION Harvested in the early morning, destemmed and pressed straight through with very little skin contact, racked and controlled fermentation prior to blending and bottling within 3 months to preserve the freshness and acidity. CELLARING Drink now while fresh flavours dominate. WINEMAKERSCOMMENTS This style is all about regionality, freshness and vitality. SERVE Serve slightly chilled at 8-12°C FOOD Crispy skinned salmon with fennel and orange salad.

2012 Secret Squirrel Chardonnay (12x750mL), Mount Barker by Byron & Harrold, 13.0% Alc/Vol PALATE Barrel ferment characters add complexity while flavours of citrus and cashew swirl around the palate to give a long flavoursome finish. WINEMAKING The 2012 Chardonnay fruit was handpicked in pristine condition. The fruit was chilled and whole bunch pressed to allow gentle pressing. The juice was transferred directly into French oak barrels and temperature controlled to ensure a slow fermentation process with natural (wild) yeasts. This allowed for the development of complex flavours and textural weight. Post-fermentation the lees were stirred gently once a week until the balance between oak, lees characters and fruit characters was achieved. No malo-lactic fermentation was carried out so all the natural acidity was preserved. The wine was lightly fined and bottled after 9 months maturation. FOOD PAIRING Pan roasted Chicken breast with a hazelnut gremolata crust served with baby rocket. The crusted chicken gives this well structured chardonnay an extra dimension showing respect to its vibrant natural acidity. The simple and crisp flavours of the Chicken together with this complex yet delicate Chardonnay, highlights the nuttiness and subtle spice elements of this pairing. VINTAGE NOTES The 2012 vintage had a wet winter followed by dry and warm conditions for summer which continued well into autumn. Due to the perfect slow ripening pattern both red and white grape varieties showed intense colour, aroma and concentrated flavours while achieving perfect tannin ripeness.

2015 Mystery Cabernet Sauvignon (12 x 750ml), Margaret River by ??????, 14% Alc/Vol, Tasting Notes: KEY POINTS Vineyard Notes: Our winemakers carefully select grapes from serveral sites in the Margaret River region. Harvesting Notes: Fruit was harvested in the early morning. Winemaking Notes: Grapes immediately crushed to static fermenters for ferment. Pumpovers occurred 4 times a day for 8 days before gentle pressing, malo-lactic fermentation and then the wine was racked to a range of new and mature oak. During maturation, the blend was periodically racked and returned to oak for 16 months prior to filtration and bottling. WINE CHARACTERISTICS Colour: Dark crimson. Nose: Intense Margaret River characters of blackcurrant, ripe berries, sage and bay leaf. Palate: Opulent blackberry and sweet plums, long and satisfying with integrated French oak and structural chewy tannins.

2016 Four Jacks Chardonnay (12 x 750ml), Manjimup by Peos Estate, 13.5% Alc/Vol, BLEND 100% Chardonnay. COLOUR Pale straw with green tints. AROMATICS Lifted nose of white stone fruit, citrus blossom, raw cashew with subtle toasty notes. PALATE Full and fleshy mouthfeel, showing intense white nectarine and citrus leaf on the palate with underlying raw cashew and subtle toasty oak, supported by a well integrated acid backbone, great length with a crisp, lingering finish. OAK MATURATION 9 months maturation in French oak. AGEING POTENTIAL 4-5 years. WINEMAKING The chardonnay grapes were picked at optimum ripeness during the coolest period of the night to help retain the vibrant primary fruit flavours. It was transported directly to the winery post-harvest, crushed and pressed to tank and allowed to cold settle. The juice was racked to barrel for fermentation. The ferment temperature was controlled, helping to retain the fresh primary fruit aromas while also developing a complex fermentation bouquet and increased palate weight and texture. Post ferment the wine was fined with traditional additives, cold stabilised and bottled.

2012 Secret Squirrel Late Harvest Reisling (6 x 750ml), Great Southern by Byron & Harrold, 11.5% Alc/Vol, Tasting Notes: COLOUR Brilliant pale straw. NOSE Lifted nose of lemon zest, white flowers and musk. PALATE Luscious palate displaying citrus, apricot and pear with underlying musk notes, crisp natural acid balances the sweet fleshy mouth feel with a fresh crisp finish. WINEMAKING The 2012 Late Harvest Fruit was machine harvested at optimum ripeness in the coolness of the night to help retain the fragile vibrant primary fruit flavours. It was transported directly to the winery, crushed and gently pressed to tank and allowed to cold settle. 48 hours later the juice was cleanly racked and inoculated with PDM yeast (A neutral fermenter that simply expresses the primary fruit spectrum). The ferment temperature was kept at around 13-14 °C, which helps retain the fresh primary fruit aromas while also developing a complex fermentation bouquet and increased palate weight and texture. The fermentation was then stopped with a pre-determined level of residual sugar. Post Ferment the wine was fined with traditional additives, cold stabilized and bottled. FOOD PAIRING Beautiful with soft cheese platters and oysters! VINTAGE NOTES The 2012 vintage had a wet winter followed by dry and warm conditions for summer which continued well into autumn. Due to the perfect slow ripening pattern both red and white grape varieties showed intense colour, concentrated flavours, and aromas while achieving perfect tannin ripeness.

The 2014 vintage was another classic year for white grapes in Margaret River allowing plenty of time during the warm reliable month of February to ripen the fruit to our specifications. Lower than average crops in many of our Sauvignon Blanc and Semillon vineyards has resulted in strong regional fruit characters. Modern white winemaking techniques are employed in the production of the Sauvignon Blanc Semillon, with temperature control considered critical from the moment the fruit reaches the winery. The fruit is destemmed and crushed, then must chilled and pressed off skins in a very short space of time. It is allowed to cold settle for 48-72 hours before being racked in a clarified state to a fermentation tank. A range of specially selected yeasts are employed on different parcels of fruit and the resulting dry tanks of wine are carefully blended to produce the desired riper style.

2012 Secret Squirrel Chardonnay (12x750mL), Mount Barker by Byron & Harrold, 13.0% Alc/Vol PALATE Barrel ferment characters add complexity while flavours of citrus and cashew swirl around the palate to give a long flavoursome finish. WINEMAKING The 2012 Chardonnay fruit was handpicked in pristine condition. The fruit was chilled and whole bunch pressed to allow gentle pressing. The juice was transferred directly into French oak barrels and temperature controlled to ensure a slow fermentation process with natural (wild) yeasts. This allowed for the development of complex flavours and textural weight. Post-fermentation the lees were stirred gently once a week until the balance between oak, lees characters and fruit characters was achieved. No malo-lactic fermentation was carried out so all the natural acidity was preserved. The wine was lightly fined and bottled after 9 months maturation. FOOD PAIRING Pan roasted Chicken breast with a hazelnut gremolata crust served with baby rocket. The crusted chicken gives this well structured chardonnay an extra dimension showing respect to its vibrant natural acidity. The simple and crisp flavours of the Chicken together with this complex yet delicate Chardonnay, highlights the nuttiness and subtle spice elements of this pairing. VINTAGE NOTES The 2012 vintage had a wet winter followed by dry and warm conditions for summer which continued well into autumn. Due to the perfect slow ripening pattern both red and white grape varieties showed intense colour, aroma and concentrated flavours while achieving perfect tannin ripeness.

2014 Loose Leaf Sauvignon Blanc Semillon (12 x 750ml), Margaret River by Forester Estate, 12.5% Alc/Vol, Tasting Notes: COLOUR Pale straw with green tinges. WINEMAKING NOTES Fruit is sourced from the northern Margaret River sub-region of Yallingup. Balanced canopies and crop levels ensure optimal ripeness of fruit for the desired riper style we are trying to produce. The 2014 vintage was another classic year for white grapes in Margaret River allowing plenty of time during the warm reliable month of February to ripen the fruit to our specifications. Lower than average crops in many of our Sauvignon Blanc and Semillon vineyards has resulted in strong regional fruit characters. Modern white winemaking techniques are employed in the production of the Sauvignon Blanc Semillon, with temperature control considered critical from the moment the fruit reaches the winery. The fruit is destemmed and crushed, then must chilled and pressed off skins in a very short space of time. It is allowed to cold settle for 48-72 hours before being racked in a clarified state to a fermentation tank. A range of specially selected yeasts are employed on different parcels of fruit and the resulting dry tanks of wine are carefully blended to produce the desired riper style.

2016 Killerby Semillon (6 x 750ml), Margaret River by Killerby Estate, 14 % Alc/Vol, Tasting Notes:Vineyard Notes: Semillon grapes were sourced from a vineyard north of the Killerby Cellar Store on Caves Road, Wilyabrup. This vineyard is low yielding and is exposed to the prevailing sea breezes keeping the vigour low to moderate. Harvesting Notes: The grapes are harvested in the early morning to retain the fresh, crisp fruit flavours and natural acidity. Winemaking Notes: Grapes were crushed ever so gently to the press. Juice was drained and settled prior to fermentation in a mix of mature French oak. WINE CHARACTERISTICS Colour: Pale green. Nose: Characteristically uplifting aromas of nettles, lemongrass and citrus with mild grassy tones. 2012 Secret Squirrel Late Harvest Reisling (6 x 750ml), Great Southern by Byron & Harrold, 11.5% Alc/Vol, Tasting Notes: COLOUR Brilliant pale straw. NOSE Lifted nose of lemon zest, white flowers and musk. PALATE Luscious palate displaying citrus, apricot and pear with underlying musk notes, crisp natural acid balances the sweet fleshy mouth feel with a fresh crisp finish. WINEMAKING The 2012 Late Harvest Fruit was machine harvested at optimum ripeness in the coolness of the night to help retain the fragile vibrant primary fruit flavours. It was transported directly to the winery, crushed and gently pressed to tank and allowed to cold settle. 48 hours later the juice was cleanly racked and inoculated with PDM yeast (A neutral fermenter that simply expresses the primary fruit spectrum). The ferment temperature was kept at around 13-14 °C, which helps retain the fresh primary fruit aromas while also developing a complex fermentation bouquet and increased palate weight and texture. The fermentation was then stopped with a pre-determined level of residual sugar. Post Ferment the wine was fined with traditional additives, cold stabilized and bottled. FOOD PAIRING Beautiful with soft cheese platters and oysters! VINTAGE NOTES The 2012 vintage had a wet winter followed by dry and warm conditions for summer which continued well into autumn. Due to the perfect slow ripening pattern both red and white grape varieties showed intense colour, concentrated flavours, and aromas while achieving perfect tannin ripeness.
